Le Friday 17 July at 7.30pm, The Domaine des Clayères welcomes one of the most emblematic winemakers of the Grand Ouest: Thierry Michon, who runs the Domaine Saint-Nicolas in Brem-sur-Mer in the Vendée.

Thierry Michon grew up just a stone's throw from Les Sables d'Olonne, on the edge of the Olonne forest and the salt marshes, surrounded by the Vendée region's wines, which had yet to make their mark on the wine map. At school, his classmates used to laugh and say to him: «Wine from the Vendée, but it's only piquette*! A phrase that could have upset him, but now does the exact opposite. It has given him the strength to show that we know how to make wine from the Vendée, a wine of great flair that is sold all over the world, in the finest restaurants in France.

Today, the Domaine Saint Nicolas is recognised by its fathers and selected by the finest gourmet restaurants in France and abroad. The Domaine's wines are prestigious nectars, reflecting a unique natural terroir and an exceptional microclimate; the entire estate has been farmed organically and biodynamically since 1995.

For the occasion, our Chef Sylvain Bourmaud has put together an author's menu, where each plate is in dialogue with the wines served, a subtle conversation between the vine and the table, between the gesture of the winemaker and that of the chef.

A rare evening, with limited seating, for those who know that the best memories are shared at the table.
